Timbale of Crab With Celery, Apples and Walnuts
| Canadian snow crab meat, drained | 2/3 cup | 200 g | 180 ml |

| Apple (russet) | 1 | 150 g | 150 ml |
| Celery | 2 stalks | 120 g | 125 ml |
| Walnut | ¼ cup | 30 g | 60 ml |
| Chives, chopped | 2 tablespoons | 30 ml | |
| Mayonnaise | 7 tablespoons | 100 ml | |
| Lemon zest | 1 teaspoon | 5 ml | |
| White wine vinegar | a few drops | ||
| Salt and pepper | to taste | ||
| To Garnish: | |||
| Lettuce leaves | 4 | ||
| Crab claws | 4 |
Chop apple and celery into small cubes. Chop up the nuts. Place
the crab, diced apple, celery, lemon zest, chive and nuts in a bowl.
Gradually add the mayonnaise until the desired consistency. Season with salt, pepper and vinegar.
Split this mix between four custard cups. Turn the cups over onto plates garnished with lettuce leaves. Remove the custard cups and decorate each plate with a crab claw.
